Premium Vanilla Planifolia (Uganda)
The Pearl of Africa’s Green Gold
Sourced directly from the fertile equatorial soil of Uganda, our Gourmet Vanilla Planifolia is a true luxury spice. While sharing the same species (Vanilla planifolia) as traditional Madagascar Bourbon vanilla, Uganda’s unique microclimate and volcanic soil yield a bean with a noticeably bolder, richer, and sweeter profile.
Key Characteristics & Specs(Grade A)
Appearance: Plump, supple, dark chocolate-to-ebony color with a high oil content and glossy sheen. Extremely flexible without cracking.
Length: 15 cm – 18+ cm (6 to 7+ inches).
Moisture Content: 30% – 35% (high natural oil and moisture retention).
Vanillin Content:1.8\% - 2.5\% (exceptionally high, providing deep flavor stability).
Flavor & Aroma Notes: Creamy and sweet with distinct undertones of milk chocolate, warm cocoa, raisins, and dried figs.
Artisanal Sun-Curing & Sustainable Sourcing
Our vanilla is hand-cultivated by experienced smallholder farming communities across Uganda's lush agricultural regions. The journey from vine to export involves a months-long traditional curing process:
Selective Hand-Harvesting: Pods are picked individually at peak maturity—just as the blossom end turns slightly yellow—ensuring maximum glucovanillin development inside the bean caviar.
Hot-Water Scalding: Fresh green pods undergo a brief hot-water blanching to stop natural vegetation and initiate the enzymatic reaction that releases natural vanillin.
Sun-Sweating & Shade-Drying: Over 2–3 months, the beans are exposed to morning sunlight, wrapped in flannel blankets during afternoon sweating phases, and slowly dried in shade to lock in essential oils and moisture.
Conditioning & Grading: The beans are sorted by length and quality, then rested in wooden boxes to allow their complex, cocoa-woody aroma to fully mature.
Vacuum Packaging: Immediately after grading, whole pods are vacuum-sealed in heavy-duty food-grade pouches to preserve fresh aroma, moisture, and vanillin levels during transport to European buyers.
Versatile Applications for Chefs, Bakeries & Food Producers
Gourmet vanilla beans are prized for their high moisture and visible "vanilla caviar" (seeds), making them ideal for high-end culinary applications where both visual appeal and raw flavor stand out:
Gourmet Pastries & Baking: Perfect for infusing artisan breads, brioche, shortbreads, and fruit tarts where real vanilla seeds showcase premium quality.
Dairy, Gelato & Ice Cream: The high natural vanillin cuts smoothly through dairy fat, delivering an authentic vanilla speckle and velvety taste to craft ice creams, panna cotta, and crème brûlée.
Fine Confectionery & Chocolates: The natural cocoa and dried-fruit notes of Ugandan Planifolia complement dark and milk chocolates, ganaches, and truffles exceptionally well.
Custards, Sauces & Syrups: Simply split the pod lengthwise and scrape the seeds straight into warm milk, cream, or dessert reductions. The remaining outer pod can be submerged in sugar to create natural vanilla sugar or steeped into craft syrups and spirits.
